Sometimes the best part of a meal, either a dinner or at
a party, can be the appetizer or hors d’oeuvre. That’s sure
to be the case when the menu includes this extraordinary
dip that provides just the right amount of spice to enliven
the mildest of crackers—a delicious, surprise treat this
time of year and for special occasions.
Yield: 6 servings

Ingredients:
½ cup unsalted butter
1 onion finely chopped
2 garlic cloves minced
¼ cup plus 2 tablespoons all-purpose flour
1 ½ cups milk
¼ teaspoon cayenne
2 teaspoons dry mustard powder
4 ounces sharp white cheddar shredded (1 cup)
