Executive Chef Jay Prisco: Pan Seared Branzino
with Fennel Slaw, Roasted Cauliflower
Branzino is the Italian name for
Mediterranean Sea Bass. This recipe
from Chef Prisco’s personal collection
brings out the full buttery flavor and
silky texture of this mild but tasty white
fish. All of the recipes in these monthly
columns are presented here with the
cooperation of Clubhouse Manager Ed

Ingredients for Fennel Slaw:
1 head fennel cored and sliced thin
1 red onion fine julienne
1 ea. red pepper fine julienne
1 ea. yellow pepper fine julienne
1 Tbsp. dill chopped fine
1 Tbsp. parsley chopped fine
2 ea. lemons fresh juiced
Salt and pepper to taste
Combine all ingredients in a mixing bowl. Refrigerate Serving over 108,000 satisfied customers since 1976
